Vin Santo is the best-known sweet wine from the Tuscan tradition, dating back to the Renaissance. To produce both Vin Santo and Occhio di Pernice, Avignonesi has always used the same yeast that has been handed down for generations, which gives it its ethereal flavour.
After selection of the best grapes they are dried for several months on bamboo wickers.
Aging is done for 10 years in small barriques, in contact with the mother, an old native yeast more than 100 years old.
This wine is perfect to drink right away in little goblet glasses.
