Manzoni Bianco Novalis is produced with grapes from the vineyard further south of the estate, where the pebbles of grava prevail.
In the early 1900s, Prof. Luigi Manzoni at the ancient Enological school of Conegliano carried out a long and precious selection work, which led to a series of crossings, among which the most famous remains the 6.0. .13.
In poor soil the vines grow with balance, limiting the development of shoots and the quantity of bunches. The cultivation follows natural criteria for sustainable agronomic management.
The vinification takes place with a short maceration on the skins for about 8 hours, followed by soft pressing and fermentation in steel at low temperature. The maintenance on the fine lees follows. In the following spring, with static decanting completed, bottling and marketing take place.
