Recioto della Valpolicella is a special product for us.

The grapes we use for Recioto come from Pergola Veronese over 20 years of age. The sanitary state must therefore be excellent, given the very long drying to which the grapes are subjected. Fermentation is also carried out by favoring the indigenous population of yeasts present in the cellar.

The processes are localized in the central phase of fermentation to facilitate its course and contribute to the extraction of color. The fermentation stops spontaneously, once the natural balance between alcohol and residual sugars is reached. The aging in wood follows the tradition of the classic area and takes place in 25 hL French oak barrels.

Recioto is produced only in the best vintages, when natural drying and fermentation are able to guarantee a level of quality up to the high standards that the history and tradition of this product impose.
