Barolo Chinato derives from a recipe elaborated at the end of the 19th century by Giuseppe Cappellano, pharmacist from Serralunga d'Alba. It was intended as a "medicinal and antimalarial soothing" and has become a classic meditation wine, the result of a wealth of artisanal knowledge.
To prepare it, an extract of cinchona calissaia combined with aromatic herbs, sugar, alcohol and spices must be added to the aged Barolo, the list of which remains secret.
It is a fascinating wine, in balance between complexity and sweetness, of great persistence, capable of giving great emotions.
