At the beginning of the 1900s, Gino Friedman was a great driving force behind the development of Modena's agriculture, promoting the renewal of cultivation techniques, combining new technologies with tradition.
The wine is vinified in rosé, with temperature controlled fermentation with selected yeasts. The second fermentation takes place at controlled temperature, between 16-20 ° C with the Charmat method.
The CO2 produced during the second fermentation remains dissolved in the wine, thus creating the famous "bubbles" of Lambrusco.
Upon reaching the over pressure and the desired sugar level, the wine is cooled from 16-20 ° C to 0 ° C. Finally, the wine is bottled with a mushroom cork and a metal cage.
