The word “Bajaj” derives from the piedmontese dialect “bajé” meaning “yawning” or “dozing”.

Production of wine starts with destemming of fresh grapes. Maceration of the skins till the “hat raised” (start of fermentation). Normal fermentation of the must continues in steel tanks at controlled temperature on selected yeasts.

This is an amazing and light complex wine that lends itself to being drunk young if you want to appreciate its freshness. On the other hand, after a longer aging, it can be found with evolutionary notes interesting both to the nose and to the palate. We would like to taste it as far off as 10 years.
