SWEET

Sweet wines (or Passiti) derive from over ripe grapes, through a drying process. Over-ripening occurs when the grapes reach the maximum size and the highest sugar concentration, losing water and decreasing in acidity. The drying process is very ancient and the production techniques have many variations: in some cases the bunches are dried on the plant, in other cases exposed to the sun or placed in ventilated rooms, hung from the ceiling or spread on mats. In any case it is always pleasant to end the day with a good glass of sweet wine.
