“La Torretta” farm is owned by the Magno-Di Mattia family since 1870. It is located in the Frascati DOCG production area in the municipality of Grottaferrata, in the heart of the Castelli Romani.
Type of soil is volcanic situated 300m above sea level with yield per hectare of 70 quintals per hectare.
Harvest of fruits is done in second decade of October manually.
After soft pressing of fruits fermentation is done in steel at controlled temperature.
There is no malolactic fermentation and ageing is done on lees for 3 months.
