Produced exclusively from the native Pignolo grape this red wine is fermented on the skins for an extended period in large wood vats.
It is fermented with long maceration in underground Georgian amphorae, with indigenous yeasts and without temperature control.
It is aged in oak barrels for an additional five years, plus five more in bottle before release.
