The brothers Silvia and Cesare Corazza over the years, have renovated the structure and the vineyards, continuing the vine-growing development of the company and selecting the native and international clones already present on their land, cultivated for generations by the maternal Lodi family, and enhanced by the lean red soil of Zola Predosa, within the DOC Colli Bolognesi area.
Vineyards soil is clayey pseudo-clay, red Mediterranean lands.
Vinification is done by cold pressing with whole grapes(Grechetto Gentile) and using of long Charmat method carbonic snow starting from must (6/8 months) at a controlled temperature of 15/18 ° C and batonnage sur lies in fermentation.
This is an artisan wine, a product of the EARTH, obtained with natural fermentation in the tank of the must of only Grechetto Gentile grape which, in this slightly sparkling version, continues to be the most produced, in number of bottles, every harvest that passes .
