The wine is a product of 100% Grechetto Gentile. Production area of the vineyards is Hills of the Serra di Castelbolognese (RA) with soil of Medium texture, with veins tending towards clay. It has Average yield per hectare: 120 quintals.
Fruits are Manually harvested in crates, in the first ten days of September.
After Soft pressing of fruits, cleaning of the must and fermentation is done at controlled temperature followed by aging on elevage on the fine lees of the yeast for 60 days in stainless steel.
The process is followed by second fermentation,Refermentation in autoclave with the Charmat method up to an overpressure of 2.0 bar.
