This wine is made from Nebbiolo grapes grown in vineyards located in a natural basin in a mid-high hill position (350-400m above sea level) with south and south-west exposure, planted on soils of Miocene Elvezian origin, rich in greyish white calcareous marl.
The de-stemmed and crushed grapes are heated to around 32-33 ° C and at the same time the pumping over is carried out. During the first few days, the number and frequency of pumping over is very high to optimize the extraction of tannins and color. As the alcohol content increases, both the temperature (up to 25 ° C) and the number of pumpovers are reduced.
During fermentation, delastage is carried out to optimize and improve the polyphenolic extraction and at the same time to oxygenate the yeast which, by fermenting under ideal conditions, produces clearer and more elegant aromas and aromas.
This is followed by a stay of the wine on the skins in a “submerged cap” for a further 40-45 days during which tertiary aromas are obtained that give complexity and elegance.
After this phase wine ages for two years in medium and large capacity oak barrels (from 2,000 to 14,000 liters). At the end of the second year the wine undergoes a further period of refinement in the bottle before being released for consumption.
