Made exclusively with Chardonnay grapes grown in the vineyards located in Montalbano’s hills around 500 m above sea-level where the soil is rich in limestone and silica guarantees mineral notes at the wine.
The vine is grown with a “pergola” system, so the grape does not suffer from direct sun which preserves the quality.
For aging of the wine, it remains for 36 months in contact with the yeast. After this time the “degourgemant” takes place.
It is an excellent sparkling wine of great freshness and great gastronomic aptitude: perfect with slightly aged cheeses, cold cuts such as finocchiona and fish and vegetable first courses.
