Bianco dell'Empolese is a white-wine DOC of the Tuscany wine region in central Italy. The title was created in 1989, and covers drier white wines and vin santo styles. These are based on the ubiquitous Tuscan white grape Trebbiano Toscano. which must contribute 60 percent or more of any blend.
This wine is made with Trebbiano, a name applied to a confusing group of white wine grape varieties originating in Italy.
The best selected grapes start to dry naturally on rough mats until December.
After this time grapes are pressed and fermentation starts in small barrels called “Caratelli” where the Vinsanto Montellori stays for a minimum time of 3 years. The wine continues to age in bottle.
