Chianti Classico is the heartland of the Chianti wine region – its traditional and longest-established viticultural area. The term classico is used in this way in several Italian wine regions (Orvieto and Valpolicella, for example), although Chianti is the most famous example.
This wine is usually made with 100% of Sangiovese grapes but sometimes mixed with Canaiolo.
At the winery, fermentation occurs in stainless steel vats for 10-12 days at acontrolled temperature of 27-28°C. Wine is then aged for 10-12 months in barriques and big third and fourth passage oak barrels followed by a minimum of 4 months in bottle.
