Made exclusively with Pinot Nero grapes,dominant red wine grape of Burgundy, now adopted (and extensively studied) in wine regions all over the world, is from Tuscany, Italy.
Seemingly weightless but densely packed with rich, complex flavors, this wine evokes oddly paired descriptors that in this case are perfectly apt: spicy yet velvety, crisp on the attack with a long, round finish, plums on the nose but sour cherry on the palate.
Fermentation takes place with indigenous yeasts only in open oak and chestnut vats of 4.5 and 7 quintals. Refine on the fine lees in used Burgundian barrels of 228 liters.
It is aged for 15 to 18 months in used barriques and bottled without filtration.
It is best served at 16-18 degree Celsius paired with main dishes featuring red meat, white meats and poultry
