Gianfranco Fino is an award-winning wine estate in Puglia, in southern Italy. The estate was founded in Manduria in 2004, when Gianfranco Fino purchased a 1.3-hectare (3-acre) parcel of vines.
Primitivo di Manduria is a key red-wine DOC of Italy's southern Puglia region. In addition to the standard dry wines, there is also a sweet version of the wine: Primitivo di Manduria Dolce Naturale.
It is made with Primitivo, a dark-skinned grape known for producing inky, tannic wines, particularly Primitivo di Manduria and its naturally sweet Dolce Naturale variant. Harvesting is done in end of August.
After sorting of fruits on table, destemming is done followed by soft pressing of the grapes.
Maceration is done in 70 Hl stainless steel vat via contact with the skins - must for two to three weeks, temperature control of the marc hair, 2 delestage per day. Pressing of the pomace with vertical hydraulic press with stainless steel cage after racking immediately in 50% new and 50% second passage French oak barriques. Daily batonnage is followed until the first racking.
After about 9 months of aging in wood, the wine without the aid of clarifiers and without tartaric precipitations is bottled and after about 9 months of aging it is released for consumption.
