Maremma Toscana is an appellation title covering a wide array of wine styles from the province of Grosseto in Tuscany. It was officially promoted to DOC status in September 2011, after 16 years as an IGT title.
Viognier is a white-wine grape variety known for producing textural, aromatic wines with pronounced stonefruit flavors; "apricots and steel" are the variety's classic flavor associations.
Vineyard are exposed towards mainly south-east and are situated at an altitude: 150 – 180 meters above sea level with Plant density of 5680 plants/ha. and yield /hectare of 100 q.li.
The Soil type is sandy soil with a skeleton of sandstone, the ground is rather homogeneous.
Ripe grapes are harvested, according to weather conditions, between late August and mid-September.
Grapes, once reached the cellar, are soft pressed and the fermentation takes place in tanks at controlled temperature (max 18 ° C) and a 10% of the grapes made the fermentation in big barrel of 5 hl with daily batonage.
After this, took place the aging on the lees of wine, in the same tanks. Follow a cooling process to 0°C and a filtration phase. The wine is bottled within April following the harvest.
