Cantina Santadi is an Italian wine producer based in the southwest of Sardinia. The estate was founded in 1960 as a cooperative of grape growers coordinated by the Land Reform Board of Sardinia (ETFAS).

Carignano del Sulcis is an Italian wine DOC of Sardinia, introduced in June 1977. It is reserved exclusively for red and rose wines made from Carignan, or Carignano as it is known here, grown in the very southwest corner of the island.

It is made with Carignan (Cariñena in Spain, Cariganen in the USA) a black-skinned wine grape variety, most likely native to Aragon. The variety is found in wines along the Mediterranean coast, particularly in northeastern Spain and in France's Languedoc-Roussillon region.

The harvest of the grapes begins in the second half of September and ends in the half of the October.

The must ferments with the skins at a temperature between 25 and 30° C. The entire mass is subjected to periodic pumping over which facilitate the passage into solution of the compounds present in the marc.

The malolactic fermentation is then carried out , which gives the wine characteristics of softness , then maturing it for a few months in concrete tanks before being bottled.
