The area in which the grapes ripen has a particular microclimate, characterized by morning mists. In most cases the fog is considered harmful to the vines, but here it allows the grapes to develop the so-called "noble mold" or "botrytis cinerea", which causes the berries to wither on the plant, favoring the evaporation of water and concentration of sugars and aromatic substances.

The grapes are harvested by grape, through many passages in the vineyard.
