The Italian law does not allow to indicate the grapes present in this label which, by choice of Walter Massa, does not fall within the wine classification (DOC, ICG, DOCG etc.). However, this wine is obtained from a single variety that has always been present in the Tortonesi Hills

HARVEST: manual in tubs with selection in the vineyard; when the petiole is lignified (right moment of ripening signaled by the browning of the petiole to the inside)

VINIFICATION: skin maceration at 8/12 ° C and subsequent pressing of the grapes after 40/42 hours, fermentation in white at 19/22 ° C with subsequent periodic batonnage until the retrogradation of the malic acid occurs

MATURATION: on its own lees for at least 10 months

AGING: minimum 6 months in the bottle but the more it evolves, the more it is appreciated in its complexity

It has a medium intensity straw yellow color. The nose opens with hints of acacia and lime blossom, accompanied by pleasant citrus sensations. On the palate it is full-bodied and mineral, with a pleasant persistence and freshness.

Walter, since 1987 has resumed vinification in purity Timorasso, not only maintaining a cultural continuity but helping to create a real cultural revolution.
